We have a little bit of a twist for you this month, as we have chef and manager of the month, Silviu and Nathan from the incredibly popular Bistrot Pierre, located in Friars Walk. Voice caught up with the dynamic duo to tell us more about working at this French Bistro.


Here’s what they had to say:

CHEF OF THE MONTH – SILVIU from Le Bistrot Pierre

V: How long have you been cooking professionally?
S:Almost 12 years. I started working in a professional kitchen when I was just 17.

V: How would you best describe your style of cooking?
S: Simple and tasty - simple is best, but sometimes the most difficult, which can go easily wrong.

V: What do you cook at home for the family?
S: Traditional Romanian food. My family loves to remember the tastes from our childhood.

V: What can people expect when they visit Bistrot Pierre?
S: Traditional French food, served in a welcoming and family-friendly atmosphere.

V: Do you have a ‘signature dish’ or favourite dish you enjoy cooking at Bistrot Pierre?
S: Favourite dish to cook at Bistrot Pierre... The mushroom fricassee. It was the first dish I learned to cook when I joined Bistrot Pierre. I love the wild mushrooms with the hint of garlic.

V: What is your favourite summer ingredient to use when cooking?
S:Asparagus. It can be steamed, grilled, sautéed... I love to use it in a risotto, or simply sautéed with butter!

V: What’s the one thing in the Bistrot Pierre kitchen that you can’t live without?
S: My team! I can’t live without my wonderful team. We enjoy the banter with each other, and we help each other out. We are all so different, but we work well together for one purpose - serving great food and keeping our customers happy!




MANAGER OF THE MONTH – NATHAN from Le Bistrot Pierre


V: What has been your best moment so far working at Bistrot Pierre?
N: Bistrot Pierre is like one Giant Family, so being offered and given the opportunity to open their most successful Bistrot to date has been an amazing experience, and to go back in my homeland of South Wales, the generous reception from everyone has been overwhelming.

V: If someone has never visited the restaurant before, which dish would you recommend off the current menu to impress them?
N: Can you drink wine from a dish? No? In which case, after you’ve sampled our incredibly moorish honey roasted chorizos, you simply have to try our Morrocan spiced slow-cooked shoulder of lamb with pearl couscous, harissa, toasted pine. délicieux! (Followed by more wine of course!)

V: Any special up and coming events?
N: Come and celebrate Bastille Day on July 14 – To honor all things French, we’ll be cooking up a vibrant atmosphere as well as a few of our favourite French dishes on our special Bastille menu from £17.95.
All our staff will be dressed in French outfits and we’d love you to join in. Come wearing your best French inspired outfi ton the day!

V: And, what are you doing for Father’s Day?
N: On June 19 say ‘thank you’to your Dad with a two or three course lunch priced at £10.95 and £12.95 in our bistrot. Booking is essential!

V: You’re a great hit with families, why do you think that is?
N: I look after my staff, and my staff take great care of our customers. It’s a people thing, and the fundamentals of customer service is the foundation to success. We thrive to achieve not just a great atmosphere, but an experience to remember. An experience that puts a smile on your face, encourages laughter and memories.

V: Finally, why should people visit your restaurant?
N: As well as our welcoming staff and friendly and knowledgeable service, chefs with a passion to deliver fresh delicious provincial French dishes, and our distinctive wine list with over 35 to choose from, value for money, having a relaxed unhurried atmosphere, and finally our French-themed hand-crafted activity book to keep the whole family entertained! As I said previously, we’re like a big family and every day we open our doors and look forward to seeing those regular faces, and getting to know new ones.
